I Have Always Loved Cucumbers, this just adds to it!!

It just doesn't get much better then this...just don't add salt..pepper yes..salt no!!

I love cucumbers, too, but they aren't exactly the mother lode of vitamins and minerals (and quick pick-me-up carbs) implied above. One medium to large cucumber (one full cup, sliced) contains a little under 4 carbs and about 16 calories. Most of the minerals are in trace amounts. The B vitamins are in such trace amounts that you're have to eat several pounds of cucumbers to get any pick-me-up benefit from them. They do have a considerable amount of vitamin A and C in them, however (in the skin, leave the skin on). They contain a fair amount of fiber, not a whole lot (about .8 grams, or about 4% of what you need daily), but along with the fiber is the perfect water-to-fiber ratio, so the fiber is utilized particularly well.

As for salt, I salt mine, same as sliced tomatoes, shortly before I eat them.
My salads at Subway are often built with as many cucumbers as lettuce and spinach and tomatoes.

I normally eat whole cucumbers in the summer and when i do, its probably 2-3 whole a day..or the same amount sliced in vinegar and sugar and water....

Sliced onions added to the mix also works.

Slice up some cucumbers and onions, put them in the equal-parts water-vinegar mixture with a little salt added to brine, some like sugar added, some don't, but the onions add their own sweetness, then leave it in the fridge for a couple or three days, and then put several slices of onions and cucumbers between two pieces of seriously bad-for-you white bread liberally slathered with mayonnaise, then salt and pepper to taste, and you've got a serious sandwich.

Great. Guess what I have a craving for.

I like cucumber slices on my ham sammiches.
Ants will not cross a barrier of cucumber peel. Good to know if you catch them sneaking in your place, or just get bored and want to watch them detour like a drunk around a sobriety check. :p
