I'd like to consider a VNL 730 or 780 and utilize the OEM 77" sleeper (stretch frame/add 22' box). What year is best and what is the max mileage you suggest? How much cash should I plan on spending?

Just get a 05-06 Sprinter and be done with it. Run it till 400k change the transmission, if you get 500-600k you've done good, if you get 700-800k you've done exceptionally well. And by the time you have put those kinda miles hauling loads you will have money for a new van.

2500 I thought they were $1600 at Espar of Michigan. I like the idea of a presto heat dish and a yamaha 2400 gen or honda 2000i. At least you can still use the generator to power your rooftop ac in the summer ! :) I had no idea they made gas powered espar I thought it was diesel thing.
