White maple

I should be patriotic and try maple for once...local source too. I've done pork with apple and hickory blends (30% flavor wood rest is oak) but my main deal is usually brisket and turkey....and use 100% oak from Arkansas....that I buy in Kansas.....I need professional help.
The last time I had anything smoked was fish when I was in my teens. Didn't really care for it. Ok, didn't like it at all. But got me thinking of trying some meats now
