Is there some convenient app to use to track all our activity? Not really a spreadsheet. You'd put in your loads, the miles, etc. You fuel up, it records the time and place, you snap a picture of the receipt and it stores it. It stores a screen shot of the Google map of the run. You deliver and it saves a snap of the BOL POD. It saves toll info, etc.

You could look at it all day by day or by pulling up all images. In spreadsheet fashion, it does all the math and comes up with all the figures, cost per mile, etc.

Neat recipes you get the scanner and the software.
I'm aware of various apps that take pictures of receipts and classify and save them, if that's what you're suggesting. I'm looking for an app that saves that stuff, along with whatever entries you make, and saves everything on a calendar day, and does all the math, like mixing Evernote, a journal, and a spreadsheet.

Artificial intelligence is coming on strong; making it possible for people to design apps without knowing code. It takes a little doing to learn how to talk to AI, but AI apps like ChatGPT, Google's Bard and Microsoft's chat app in the Edge browser, might help you get the app you want. It would involve referencing several apps; your electronic log, your bookkeeping program, and other apps you want to include.
