running warm

I just had a new head and head gasket replaced as well as the surge tank for coolant was leaking so replaced it and the cap....no leaks, etc. but was still running a little warm when at road speed with a/c on...by warm i mean 180-190 without the fan coming on...took it back and they told me i needed a CAC (charge air cooler).had a big gash in it, once replaced got alot of power back and runs great,but still gets a little warm at road speed (65mph) , this truck use to always run at 175-180 degrees but now seems to run at 180-190. what is too hot? am i doing any damage? by the way this is my fl-112, 2004 with a mbe 4000 series engine, 850,000 miles on it also thermostats were replaced. thanks. frank

1 or both of the thermos might of been bad "stuck open" now that they replaced them they are doing there job. 180-190 is perfect for highway cruising. As Greg stated 210 is when I start to worry also.
