I recently purchased a 20 foot box truck with no lift gate and we are not dock high. Its been hard finding work. Any advice?

Find freight that works for it.
It may require a gate. A gate, not dock high, isn't a good option for general freight.
List it as a 10 pallet Sprinter. May require Michigan plates.

I spent a little time delivering new furniture in a truck like this. It's easier to unload. You might want to talk to a Havertys type furniture outlet and contract with them. You will need a helper. Just a thought. BTW, the money was pretty decent.

How far off from dock height is it? Look under the truck where the box joins the frame, look for a 2x4 or 4x4 between box rails & frame rails. Probably not there. Seek out dock high straight and compare theirs to yours.
Loosen the box bolts (big U bolts) jack up box insert appropriate boards lower and tighten.
Based upon unmentioned skill set it might be easier to pay a shop to do it.
The key is to compare a dock high straight to yours. So you can see what's needed.
To much is undefined in the post to do more than guess.
