Really I use hot Italian sausage a big onion some garlic red,yellow and orange peppers a generous amount of Tony's Cajun seasoning and a home made tomato base along with some special spices that are my secret ! Simmer it for a good time u usually do about 3-4 hrs enjoy it's even better the next...
