Genuine Mexican Recipies?

Ive been experimenting with home made salsa with good results and now I'm looking for some Mexican dish recipes. By that I mean lost of flavor not the wannabe just dump heat on it like you get at a chain eatery.

I already have a couple favorite chili recipes with different beans and meat combos. I'm looking for flavor and heat but it has to be edible by kids as well.
