Missouri isn’t really a “food” state.
That said, this is no 5 star restaurant by any means, but if you’re in the area, and you want something that’s not a chain restaurant, then I’d suggest:

One of my favorites was in Missouri.
On 44 between St Louis and Rolla if I remember right.
Doolittle ? Near the EB rest area.
Not a Truckstop but the lot held 40 or so TTs.
Awesome chicken. Ham and beans. Decent country favorites.
And cheap enough that OVM would eat there.
Edit: the place is Cooking From Scratch, Doolittle, Mo.
Right off I-44
2nd Edit: if I had read the article I would have seen this is the place they picked for Missouri.

I-80 has a very large sit down restaurant.
Almost upscale for a Truckstop.
It’s easy to miss with all that’s going on over there.

Black Bear Diner at the TA in Barstow, CA
Kirk's Nebraskaland at Roady's in Lexington, NE
Marlin's Family Restaurant at I-90 Travel Center - Mitchell, SD
Blue Line Travel Plaza in Worthington, MN (not as good as the Petro in Clearwater, but very good)
Jennings Travel Center in Jennings, LA
Dotties at Midwest Truckstop in Cuba, MO
Dixie Cafe at Road Ranger in McLean, IL

Kansas City Babybacks - down the hill from Oak Grove Petro in Oak Grove, MO

If you enjoy getting coronary artery disease, you'll love truck stops..IMHO no oils, no dairy, includes butter cheese and cows milk...if your food comes in a processed box, beware. Read "How not to die" by Dr. Michael McGreger....

I'd say the bigger cities have the best eats, LA, NY, Chicago, Houston. Runners up include Tampa/Miami, Kansas City and Albuquerque. And of course the well known culinary cities like Boston and New Orleans. Usually something good in every state.

There is a Portillo’s in S California.
Thinking just SE of the 60/15 interchange.
Minutes south of Fontana.
We used to go to a movie theatre nearby that was $2.50.
Most movies were packed.

There is one also in Buena Park, CA. Almost went to it but I'm trying to save that experience for Chicago. :D

That got me thinking of the Dawg House, down the street from C&M. I wouldn't doubt Mike goes there on a daily basis.

76 Truckstop in Grand Rapids is great! The 49er in Sacramento is great also! I've been told in Walcott IA at the Road ranger theres a great place in there!
