What's for Breakfast?

Here a couple of quick ideas for breakfast or something to fill you up quickly.

Bacon Wrap:

2 pieces of Wright Bacon
2 pieces of cheese

Cook bacon in microwave till the crispness that you like. I prefer mine very crispy and that takes about four minutes in the microwave for two pieces of bacon. As soon as I take the bacon out of microwave I wrap it around my cheese. The bacon is hot and it will slightly melt the cheese and also cool to that form.

Truckers Energy  Coffee

2 TBLS of Kerrygold Butter
2 TBLS of Coconut Oil or MCT Oil
Coffee

Add in's
Cinnamon
Cocoa powder
cream

Melt the butter and coconut oil/MCT in microwave
Make coffee or use store bought coffee
Pour into tall container or can use a shaker
Use an immersion blender or the shaker to stir and make the coffee frothy. Drink while warm. This coffee has to be really mixed well to taste good.

Egg & Sausage Muffins

1 egg
cooked and crumbled sausage
Add In's:
onion
cheese
green chiles

There are several ways to cook the Egg & Sausage Muffins:

Mix raw egg with cooked sausage and the add in's and then you can cook one at a time in the microwave in a glass or plastic cup. Both ways work well. Cook until egg is cooked through.

Use a muffin tin and cook at 350 for about 30 minutes or until cooked through. When I cook the Egg Muffins in a muffin tin I will freeze them and take out a muffin in the morning and warm up.

My favorite combination is Sage Sausage, sharp cheddar cheese, and 505 Green Chiles mixed with an egg.
