cat 3126 oil psi question

when going down the road at 62mph/1800 rpm the oil pressure is usually just under 50. if i let the truck idle for a few minutes after running it on the hwy either to make a pit stop or to unload the pressure jumps to between 65 and 75 when i restart and stays there until i shut it off for a few minutes.

any ideas?

just trying to get this truck to october when it is paid off and a new ruck becomes available.
